i used a recipe which asked for 500g of flour 300ml of water and 7g of fast acting yeast (i used 20g of live yeast) and 2tsp of salt, it turned out pretty good, but the crust was very crisp, i was after a more chewy texture like bread you get from tescos or asdas bakery. did this happen because of the recipe or was it my technique? can anyone give me a real nice white loaf recipe which will have a more chewy crust. and i really like tiger bread how do you make that?
